Storing

After cleaning the electrodes, is it okay to let them dry on a paper towel or should they always be hanging?

That's OK, provided that you make sure that no water can run into the connectors.

What about keeping the electrodes on a wooden table overnight? Someone in my lab says they can be corroded if they touch anything, including towels.

I feel like this is true, but it might take thousands of years to happen, not overnight. But I definitely don't want the electrodes to become unstable.

Use common sense to prevent the tips from being polluted with traces of metal.
